Ingredients are flexible for this recipe, you can add or take away anything you want.
2-3 cups brown rice
1 package nori sheets (found in the asian aisle)
1 mango sliced
2 avocados sliced
1 large sweet potato cooked and sliced
1 cucumber sliced
1 red or yellow bell pepper sliced
For the Tofu:
Extra firm tofu
¼ cup Soy sauce
1 tablespoon Onion powder
1 tablespoon Garlic powder
Sesame seeds
Optional dipping sauce:
Soy sauce, Ginger, wasabi sauce (found in Asian aisle by the Nori sheets)
Instructions
1.First, start making the Tofu Crumbles. This is what will add more flavor to the sushi. But if you don't like tofu you can skip this part. Remove tofu from packaging and crumble it with your fingers into a bowl. Add soy sauce, onion powder and garlic powder then spread out tofu onto a baking sheet. Cook at 425 degrees for 20 mins. Stirring halfway. (You can also use an airfryer and cook for just 10 mins or until crispy)
2.Assemble sushi by first placing the nori sheet on a flat surface. Then spread a layer of rice over the sheet leaving about 1 inch open at the end of the sheet. Add your choice of veggies. Sprinkle sesame seeds and tofu crumbles on top. Start on one end and roll up the nori sheet tightly. Lightly dampen the end of the sheet so it will stick and finish rolling. Carefully cut the sushi with a sharp knife. Serve with soy sauce, ginger (optional) and wasabi (optional)
