Vegan Tortilla Cups

These Vegan Tortilla Cups are the perfect bite-sized appetizers or fun easy and fast dinner option! Made with fajita tortillas filled with layers of creamy refried beans, hearty black beans, fresh veggies, and a pop of salsa, they’re packed with flavor and color. Customize them with your favorite toppings like vegan cheese, sour cream or fresh cilantro for a delicious, plant-based twist on taco night. Quick, easy, and versatile, these little cups are guaranteed to be a hit at any table!

Ingredients:

  • 12 small corn or flour tortillas
  • 1 can refried beans ( 2 ½ cups  homemade)
  • 1 can black beans ( drained, and rinsed)
  • 1 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1 cup corn kernels (frozen or canned)
  • 1/4 cup salsa
  • 1/4 cup vegan cheese (optional)
  • lettuce
  • Fresh cilantro for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin or use parchment paper.
  3. Cut each tortilla into 4-6 wedges and mold them into the muffin tin, creating cup shapes.
  4. Bake the tortilla cups for 8-10 minutes until crispy and golden.
  5. Once the cups are done, remove from the oven and add a spoonful of refried beans to the bottom of each cup.
  6. Top with black beans, diced tomatoes, onion, and corn.
  7. Add salsa and vegan cheese on top (optional).
  8. Garnish with fresh cilantro and serve immediately. Enjoy!
