Vegan Carrot Hot Dogs

Vegan Carrot Hot Dogs
Makes 6-8 servings Prep Time: 10 minutes Cook Time: 10 mins  FODMAP: low

This is a great alternative for your summer BBQ’s. Just make sure not to overcook the carrots or they can get mushy. The key ingredient in this recipe is the liquid smoke. Real hot dogs are also flavored with liquid smoke which is why using it makes the carrots almost taste the same.

Ingredients
6-8 carrots
6-8 whole wheat or gluten-free buns
For the Marinade
¼ cup soy sauce
¼ cup apple cider vinegar
¼ cup veggie broth
2 tbsp liquid smoke, any variety (you can buy this on Amazon, we like the hickory flavor)
2 tbsp maple syrup
1 tsp yellow mustard
1 tsp garlic powder
1 tsp onion powder

Instructions
1.Peel carrots then cut to the same length as a bun
2.Place carrots and marinade in the instapot (if you don’t have an instant pot you can boil carrots in water until tender, then marinate in sauce for 4-6 hours until ready to grill)
3.Cook in the instapot for 2 minutes. Do not overcook.
4.Quick release then carrots can stay in the instant pot with marinade until ready to grill (or store in the fridge with marinade for a longer period of time.)
5.Grill carrots on an open grill. This step is not necessary, but it gives it a great bbq taste.
Gluten-Free: Use alternative hot dog buns and opt for tamari sauce instead of soy sauce
