Tempeh Gyros
Makes: 4 • Total Time: 15 minutes: • FODMAP Rating: medium
Tempeh can be a great substitute for meat in the typical gyro, but you could also try this exact recipe with soy curls or even tofu instead. To be honest my kids prefer vegan meatballs for this meal the best, and so I make Tempeh or soy curls for the adults and store bought vegan meatballs for the kids. The recipe for the tzatziki sauce is awesome and really makes the dish.
Ingredients:
1 package of tempeh, sliced into thin strips
Pita bread or flatbread
1 tomato, diced
1 cucumber, sliced
Salt and pepper to taste
For the Tempeh Marinade:
2 tablespoons low-sodium soy sauce or tamari
2 tablespoons lemon juice
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Black pepper, to taste
For the Vegan Oil-Free Tzatziki Sauce:
1/2 cup plain unsweetened vegan yogurt
1/2 cucumber, grated and excess water squeezed out
1-2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
Salt and pepper to taste
Instructions:
- In a bowl, whisk together the marinade ingredients - low-sodium soy sauce, lemon juice, minced garlic, oregano, thyme, smoked paprika, cumin, and black pepper.
- Place the tempeh strips in a shallow dish or resealable bag and pour the marinade over them. Make sure the tempeh is well coated. Let it marinate for at least 30 minutes, or longer if time allows.
- Preheat a non-stick skillet over medium heat. Once hot, add the marinated tempeh strips and cook for about 3-4 minutes on each side until browned and crispy.
- While the tempeh is cooking, warm the pita bread in the oven or on a stovetop.
- To assemble the gyros, layer the crispy tempeh strips, diced tomatoes, and sliced cucumbers on the warmed pita bread. Season with salt and pepper to taste.
Instructions for Tzatziki Sauce:
- In a bowl, combine the vegan yogurt, grated cucumber, minced garlic, lemon juice, and dill.
- Mix well and season with salt and pepper to taste.
- Adjust the flavors as needed, adding more lemon juice or dill if desired.
- Chill the tzatziki sauce in the refrigerator for at least 30 minutes to allow the flavors to meld together.
- Serve the tempeh gyros with a generous dollop of the homemade tzatziki sauce.
