Quinoa Black Bean Dump and Go Casserole
Makes: 6-8 servings • Total Time: 50 mins • FODMAP rating: Medium
This is such an easy, yummy dinner and a great way to use quinoa. Make sure not to skimp on the optional toppings, that is where a lot of the yummy fresh flavor comes from. If you want to increase the protein in this recipe, you could also add in some TVP.
Ingredients
1 cup dry quinoa
1 and ¼ cup vegetable broth
10 ounce can diced tomatoes and green chiles
10 ounce can red enchilada sauce
1 can black beans, drained and rinsed
1 cup frozen corn (can use canned corn)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
Optional toppings: cilantro, lime, avocado, tomatoes, etc
Instructions
1.Preheat the oven to 375 degrees(F).
2.In a 13 x 9 inch baking dish, add in all the casserole ingredients, except the optional toppings. Stir to combine everything, straight in the baking dish.
3. Bake for 45 mins.
4. Remove from the oven and serve with avocado, fresh tomatoes, lime juice and cilantro.
*for lower FODMAP option, omit onion and garlic powder. Use TVP instead of black beans
