Lentil Soup

Ingredients
1 onion
4 cloves garlic
3 carrots (or parsnips)
4 celery sticks
4 potatoes cubed
2 teaspoons cumin
1 teaspoon turmeric
1 teaspoon salt (more or less depending on preference)
½ teaspoon curry powder
½ teaspoon Cayenne pepper (omit if you don’t like spicy soup)
2 15 ounce cans diced tomatoes (fire roasted if possible)
16 ounce bag of lentils (green or brown)
7 cups veggie broth (You can use veggie broth paste with 7 cups water)
Juice of 1 lime
A handful of cilantro leaves
Salt and pepper to taste


Instructions

1.Place everything into an instapot. (be generous with the veggie paste for added flavor). Cook on high pressure for 20 minutes. 

2.Add the lemon juice and cilantro after it is cooked. Add salt and pepper to taste. Optional to serve with it with toast, avocados, cashews sprinkled on top, or naan.
