Instant Pot Maple Apple Baked Beans
Serves: 6-8
Total time: 40-60 minutes ( depending on if you pre soak the beans)
FODMAP: High
Ingredients:
3 red apples, peeled and diced
2 cups dried navy beans (or substitute with pinto, Great Northern, cannellini, black, or kidney beans)
1/4 cup maple syrup
1/4 cup molasses
1 onion, chopped
2 garlic cloves, minced
1 tbsp apple cider vinegar
1 tbsp mustard
3 cups water (or vegetable broth for more flavor)
1 tsp smoked paprika
Salt and pepper to taste
Instructions:
1.For easier digestion and better texture, soak the dried beans in water overnight, then drain and rinse. If you're short on time, you can skip this step and cook the beans directly, but you may need to increase the cooking time slightly.
2.Set the Instant Pot to "Sauté" mode. Add a splash of water or vegetable broth. Sauté the chopped onion and garlic for 3-4 minutes until softened and fragrant.
3.Turn off the "Sauté" mode. Add the soaked and drained beans (or unsoaked if skipping), diced apples, maple syrup, molasses, apple cider vinegar, mustard, smoked paprika, water (or broth), and salt and pepper. Stir everything to combine.
4.Cook on Manual for 35 minutes on high pressure if the beans are soaked, or 50 minutes if the beans are unsoaked.
5. Naturally release for 10-15 minutes, then carefully release any remaining pressure manually.
6. Open the lid and stir the beans. Adjust salt, pepper, and sweetness (add more maple syrup if needed). If the beans are too watery, you can set the Instant Pot to "Sauté" mode and simmer for a few minutes to thicken the sauce.
7. Enjoy your baked beans as a main dish or a side, paired with rice, cornbread, or your favorite plant-based dishes.
