A variety of recipes for a vegan Christmas

Happy holidays!

However you celebrate the holidays I hope you and your family are happy and healthy and have fun plans to celebrate together.

To help lighten your load I've done the heavy lifting and put together this menu to fill your Christmas Day with delicious plant-based meals! It's filled with a variety of options to choose from to make the day truly special and delicious. 

I hope you are able to find options and fill your day with the tastes of the season.

Breakfast
Pumpkin Pecan Pancakes with Apple Cinnamon Syrup-Whole-food, vegan/plant-based pancakes with a super quick and simple apple cider syrup.
Cinnamon Bun Breakfast Squares-  Think of it as a cinnamon bun in bar form. Even better, it's made completely from wholesome plant foods! This could be the perfect dish to bring to a family gathering.

Lunch
Cranberry Chick’n Salad- This dish would make the perfect quick meal in-between opening gifts a relaxing with loved ones.
Grilled Vegetable Hummus Sandwich Use your oven’s broiler as a quick indoor grill to create a simple-yet-fancy vegetables sandwich in a flash. Use whatever vegetables and sandwich condiments you like.

Appetizer
Tofu Dill Dip-You’ll love this plant-based substitute for a classic creamy dill dip. Because of tofu’s lack of flavor, it absorbs other flavors like a sponge.
Oil-Free Sweet and Spicy Snacking Nuts- A simple but upscale snack that would be great to set out while other food is being prepared for the holiday feast!

Dinner
Mushroom Wild Rice Soup-  Leftovers store well, but the soup gets thick and may need to be thinned out with some extra water the next day.
Fall Kale and Quinoa Salad- This is a refreshing side dish that uses leafy greens, whole grains and provides pops of color with pomegranate and cranberries. It’s a power-packed salad that will give an energy boost as well as a great source of plant protein.
Easy Plant Based Dinner Rolls- This easy recipe is so versatile and can be used in a variety of different ways. Try them shaped in rolls, as pizza dough or even breadsticks. The longer you let the dough rise, the fluffier the final product will be.

Dessert
Vegan Sweet Potato Chocolate Cake with Cashew Frosting-This is a crowd favorite for many people! It's vegan AND delicious You won’t even be able to taste the sweet potato in it.
Vegan Hot Chocolate-This vegan hot chocolate will warm you up on the cool fall mornings! Top with your favorite dairy-free whipped cream and chocolate chips and your taste buds will be so happy.
