Crockpot Sweet and Spicy Sweet Potato Chili (dump and go)
Serves: 6 • Total Time: 3 hours • FODMAP Rating: Medium

This recipe is sweet and a little spicy! It's a fun mix on the typical sweet potato chili. The orange juice makes it sweet and the adobe sauce makes it a little spicy and smoky. It's so good. Plus it is SO EASY to cook everything in the crock pot. Just dump and go! Give it a try!

Ingredients

1 large yellow or red onion, finely chopped

2 teaspoons salt and black pepper to taste

6 garlic cloves, minced

2 tablespoons brown sugar

2 teaspoons ground cumin

2 teaspoons garlic powder

2 teaspoons onion powder

¾ cup orange juice

3 tablespoons adobo sauce, 1-2 chipotles for extra spice if wanted

1½ pounds sweet potatoes (4 to 5 small-medium or about 2 large), cut into 1-inch pieces

2 (15-ounce) cans black beans, drained

1 (28-ounce) can crushed or diced tomatoes

1 1/4 cup water

Juice of 1 lime 

1(10-ounce) bag frozen corn

Garnish: Cilantro, avocado, red onion if desired.

Instructions:

  1. In a large Crock Pot,  Add the onion, garlic, brown sugar, cumin, garlic and onion powders, and stir to combine. Add the orange juice and let it come to a simmer. Add 1-2 chipotles to make it spicier or add just the adobo sauce, sweet potatoes, beans, tomatoes and lime juice. Season generously with black pepper and 2 teaspoons salt. Stir in 1¼ cups water and cover the crock pot and cook for 3-4 hours.
     
  2. Just before serving, stir in the corn and let it warm through. Taste and add more salt and pepper if necessary. Top with cilantro, avocado and red onion if desired.
