Chipotle Grain Bowl
Serves: 4-6 • Total Time: 30 MIN • FODMAP rating: high 


This grain bowl is a little spicy. If you like spice, I also like using the sauce on veggie sandwiches. It is
very versatile. Make sure to massage the kale a little to soften it up.


Ingredients
Sauce
¼ cup pitted green olives (about 12)
1/4 cup water
1/4 cup tahini
1 tablespoon maple syrup
1–2 chipotles in adobo sauce (for less spicy option use 1-2 Tbsp of just the sauce)
1 small clove of garlic
juice of 1 orange (about 1/4 cup)
1/2 teaspoon salt
Bowls
2 cubed roasted sweet potatoes
1 (15 oz) can black beans
3-4 stalks kale (stems removed)
8-12 oz quinoa (cooked in vegetable broth)
2 avocados

Instructions
1. Blend all sauce ingredients in a blender until smooth. Season to taste.
2. Cook/prepare your bowl ingredients and place in individual bowls.
3. Add the sauce over bowl ingredients.

 


*Don’t forget to preload on vegetables before you eat!
*FODMAP Swaps: Keep sweet potato portions under ½ cup and increase as tolerated or use white
or red potatoes instead; keep black bean portions to under ¼ cup and increase as tolerated; keep
avocado servings to 1 slice and increase as tolerated
