Vegan Brownies
Serves: 6 • Prep Time: 15 minutes • FODMAP rating: medium

Just because you are eating more plant-based doesn't mean you have to give up some your favorite foods! These vegan brownies are dairy-free, egg-free and contain a great amount of fiber and protein! 


Ingredients
½ cup almond flour
⅓ cup cacao powder
½ teaspoon baking soda
⅔ cup granulated sugar, preferably coconut
¼ teaspoon salt
3 oz unsweetened baking chocolate
⅓ cup almond butter
¼ cup maple syrup
1 teaspoon vanilla
2 flax eggs*


Instructions
Prepare the flax eggs
Preheat your oven to 350°F
Combine all dry ingredients including the sugar in one bowl then set aside.
In a medium saucepan over very low heat, melt the baking chocolate while stirring constantly, then stir in the almond butter to combine
Remove from heat and allow to cool for a minute, then stir in the maple syrup and vanilla, add the flax eggs and beat until smooth and well combined.
Stir in the dray mixture until no flour spots remain. If needed, add a little water.
Transfer the batter to a parchment lined 8x8 inch baking pan.
Bake 350°F for 20-25 minutes
Allow to cool completely to room temp before cutting into squares.

*Flax eggs: 2 tablespoons ground flaxseed mixed with 5 tablespoons water mixture needs to sit for 15 mins or until gelled
*Nut-Free: Use chickpea flour instead of almond flour and granola or cookie or sunflower seed butter instead of almond butter
